Through the course, you will learn how to chop, slice, cut, prep, and cook ingredients in order to optimize their nutritional value and digestibility, and learn why eating plants supports your overall health.

What does “quality” mean when it comes to ingredients and why does quality matter? Whether you’re a vegetarian, vegan, omnivore or eat with another philosophy, what you eat gets translated into your cellular structure. We literally become what we eat. We will discuss pantry staples including proteins, fats, carbohydrates and fresh produce as they relate to quality. This workshop will debunk common myths perpetuated by the food industry and food scientists. I will show you how to eat to best feed your unique self with confidence.

Understanding The Microbiome

This is a 1 day Immersion class

What is the microbiome and what factors are influencing the integrity of this important part of our inner ecology. In the absence of a healthy gut it is challenging feeling well in mind-body. This vital connection is often overlooked when we don’t feel like ourselves. We will examine how we are unique eaters with different strengths to breakdown, absorb and eliminate different foods, and what lifestyle habits affect the delicate balance of the microbiome. A ferment will be prepared and samples of quality prebiotic and probiotic rich foods will be available for tasting.

Cooking for The Changing Seasons

This 5-part workshop series will explore the mind-body connection as it relates to eating for the changing seasons. Morning lecture with afternoon hands-on cooking demonstrations and explorations.

Broken down into 5 parts that explores how to optimized your wellbeing during each of the 12 months, this course will introduce you to the laws of rhythm and change as they relate to the body’s mental and physical health and the cycles of the year. Topics will include: an introduction to 5 element theory, identifying the energetic qualities of food from a yin/yang perspective, the importance of seasonality of ingredients, intuiting and identifying how colors, flavors, and cooking methods can work in your favor during each season, and the mind-body effect of eating more harmoniously with the seasons.

Run Time: 5 workshops meet once a week for 5 consecutive weeks. || 10am-5pm, with a 1-hour break for lunch.

A Personal Health Odyssey

Developing and strengthening our inner wisdom is essential in a world that mostly values “thinking” over subtle understanding and internal “knowing” regarding our own health. Split into 4-parts, these workshop series will explore the meaning of self-care — what it means, what it looks like, the importance of daily rituals and how to develop them, and how to develop your intuition around health and food. We will journal, share, reflect, and menu plan using strategies synthesized from East and West healing traditions that nurture our integration of our minds and bodies in a way that is unique to each individual.
